Ingredients

  • 1/2 cupslices mild onion rings
  • 1/2 cupsliced California Wonder sweet pepper
  • 1/2 cupcubed cucumber
  • 1/2 cupsliced cauliflower
  • 1 cupsprouted mung beans
    California Farm Indoor Mung Bean Sprouts
  • 1/2 cupsliced wintercarrot
  • 1/2 cupsliced napa cabbage
  • 1/2 cupsliced leek
  • 1/2 cupsliced celery stick
  • Rice vinegar
  • Turmeric
  • Palm sugar
  • Fresh ginger
  • Pepper sauce

  • Clovehardneck garlic

Steps

30 minutes

    Put all vegetables in dutch oven, cover with water, pour water into measuring cups. Add half the water back with the vegetables, fill pan with equal amount of apple cider vinegar or rice vinegar.

    Per cup of liquid, add 1/4 Tsp turmeric, Tbs of palm sugar, 1/4 Tsp pepper sauce, 1/4 Tsp slivered fresh ginger, clove of garlic. Bring to boil, taste, add sugar or spices if preferred, steam 16 minutes, use slotted spoon to ladle veggies into salad bowl, cool to serve. Stays fresh for a week in the fridge. Use leftover liquid as dip.

My grandparents and parents taught me growing, cooking and preserving home grown fruits and vegetables, eggs, meats and fish. I got certified by the University of California Master Gardener Program in 2005. I try to bring out the original flavor of ingredients, then add layers of spices, herbs and flavorings that enhance, not distort the taste.
