I wanted to make a fluffy sponge cake!
I admired cakes with height like those from a store.
Baking time has been adjusted to 32 minutes, but check with a toothpick at 28 minutes.

Ingredients

Makes one 6-inch cake
  1. 3eggs
  2. 60 ggranulated sugar
  3. 60 gcake flour
  4. 20 gmelted butter
  5. 200 cc+ 15g heavy cream + sugar
  6. 3 tablespoons☆canned fruit syrup
  7. 1 tablespoon☆strawberry liqueur (if available)
  8. 1 packstrawberries

Cooking Instructions

    Line the pan with parchment paper. Melt the butter in the microwave. Sift the cake flour.

    Separate the egg yolks and whites, placing the whites in a large bowl. Add sugar in three parts, beating into a firm meringue.

    If you have time, place the egg yolks over a double boiler and beat with a hand mixer until fluffy before adding.

    Add the egg yolks and mix, then add the cake flour and gently fold with a spatula until no flour remains.

    Add the melted butter while catching it with a spatula and mix evenly.

    Pour into the prepared pan. Bake at 340°F (170°C) for 32 minutes. Check with a skewer; if it comes out clean, it's done.

    Mix ☆ to make the syrup. It doesn't have to be exact. See tips for guidance.

    Make whipped cream. Whip to soft peaks, then separate 2/3 and whip to stiff peaks.

    Slice the cooled cake from step 6 in half and spread the syrup from step 7 on the cut surface. Spread the cream whipped to stiff peaks and layer with sliced strawberries, then spread more cream.

    After sandwiching, cover the entire cake with the cream whipped to stiff peaks. It doesn't have to be perfectly smooth.

    Pour the cream whipped to soft peaks over the top and spread smoothly. It's easy to spread because it's soft.
