Ingredients

Serves 3 servings
  1. 3thick-cut pork loin chops
  2. Salt and black pepper, to taste
  3. as neededFlour,
  4. 1 tablespoonolive oil (or vegetable oil)
  5. 2 tablespoonswhite wine (or sake)
  6. 2 tablespoonsgrainy mustard
  7. 3 tablespoonsheavy cream
  8. 1 tablespoonbutter

Cooking Instructions

    Trim the pork and pound both sides (using kitchen scissors makes trimming easy).

    Season both sides with salt and pepper, then lightly dust both sides with flour using a tea strainer or similar tool.

    Heat olive oil in a frying pan and add the pork. Cook on medium-high heat for the first 1-2 minutes, then cover and cook on low heat until thoroughly cooked.

    Once one side is browned, remove the lid and cook the other side until it is nicely browned.

    Sprinkle with white wine to evaporate the alcohol, then add all the ingredients marked with ◎ and coat everything well.
