Ingredients

8-9 rolls
  1. [Dough]
  2. 2 cupsbread flour (about 260 grams)
  3. 1/3 cupcake flour (about 40 grams)
  4. 1/4 cupsugar (about 30 grams)
  5. 1 teaspoonsalt (about 5 grams)
  6. 1large egg
  7. Milk combined with egg to make 3/4 cup (200 ml)
  8. 1/4 cupunsalted butter, softened (about 60 grams)
  9. 1 1/2 teaspoonsdry yeast (about 5 grams)
  10. [Topping]
  11. as neededCinnamon sugar,
  12. Raisins, as needed (optional)
  13. [For Glaze]
  14. as neededMilk,
  15. [Icing]
  16. 1/3 cuppowdered sugar (about 40 grams)

Cooking Instructions

    Place the dough ingredients into the bread machine pan (put the dry yeast in the automatic dispenser) and let the machine handle the dough cycle until the first rise is complete.

    After the first rise, lightly flour a surface, take out the dough, reshape it into a ball, cover with a damp cloth, and let it rest for 10 minutes.

    Roll out the dough into a rectangle, releasing any air bubbles with a rolling pin. Leave 1 inch (3 cm) at the end uncoated and sprinkle cinnamon sugar evenly over the surface.

    Roll the dough tightly from the front, sealing the end well. Cut into equal portions with a dough scraper.

    Place the dough pieces in aluminum cups, cover with a damp cloth to prevent drying, and let them rise in the oven at 104°F (40°C) for 25-30 minutes for the second rise.

    Once the dough has doubled in size, brush the surface with milk and bake in a preheated oven at 375°F (190°C) for 15 minutes until done.
