Ingredients

Serves 2 servings
  1. 14 ozbeef short ribs
  2. 2potatoes
  3. 1/2carrot
  4. 2green bell peppers
  5. 1/2large onion
  6. 1large eggplant
  7. 1 clovegarlic
  8. 1medium tomato
  9. 1/2 cupwhite wine
  10. 1 1/2 cupsbroth
  11. Seasonings
  12. 1/2 candiced tomatoes
  13. 1/4 cuptomato ketchup
  14. 2 tablespoonslemon juice
  15. Salt and pepper to taste

Cooking Instructions

    Cut the beef into large bite-sized pieces. Peel and finely chop the eggplant, onion, and garlic.

    Heat oil in a frying pan and sauté the beef. Peel and dice the tomato. Cut the potatoes, carrot, and bell peppers into bite-sized pieces.

    Heat oil in a pot and sauté the eggplant, onion, and garlic until softened. Add the white wine, broth, tomato, and beef, and simmer over low heat.

    When the broth is reduced by half, add the parboiled potatoes and carrots, along with the seasonings, and simmer over low heat for 1 hour.
