This is a 4 layer moist coffee flavored cake filled with coffee and cocoa cream with a marscapone butter cream frosting for a tiramiusu explosion of flavor in a layer cake!

Ingredients

  1. For Cake
  2. 8 ouncesunsalted butter, at room temperature (2 sticks)
  3. 2 1/4 cupscake flout
  4. 2 teaspoonsbakingvpowder
  5. 1/2 teaspoonsalt
  6. 1 1/2 cupsgranulated sugar
  7. 4large eggs
  8. 1 teaspoonsvanilla extract
  9. 3/4 cupwhole milk
  10. For Filling
  11. 8 ouncesmarscapone cheese, at room temperature
  12. 1 1/2 cupheavy whipping cream
  13. 1/2 teaspooncoffee extract
  14. 2 teaspoonsespresso powder
  15. 2 teaspoonscocoa powder
  16. 3/4 cupconfectioner's sugar
  17. For Frosting
  18. 12 ouncesbutter, at room temperature 2 1/2 sticks)
  19. 8 ouncesmarscapone cheese, at room temperature
  20. 3 1/2 cupsconfectioner's sugar
  21. 1 teaspooncoffee extract
  22. 2 teaspoonsvanilla extract
  23. 1/4 teaspoonsalt
  24. For Garnish
  25. as neededsweetened cocoa powder
  26. as needed, fresh strawberries

Cooking Instructions

    Make Cake

    Preheat b the oven to 325. Spray 4 - 9 inch cake pans with bakers spray

    In a bowl whisk together flour, baking powder and salt

  4. 4

    Beat butter and sugar until light and fluffy

  5. 5

    Add eggs one at a time and beat beat in add vanilla and coffee extracts

  6. 6

    Alternate the flour with the milk milk and mix until blended

  7. 7

    Pour intprepared pans and bake 12 to 15 minutes until a toothpick comes out just clean. Cool in pans 10 minutes then cool completely on wire racks

    Make Filling

    Beat marscapone and coffee extract until smooth

    Beat 1 1 1/2 cups cream until it holds soft peaks then fold onto marscapone until blended

    Divide batter between 2 bowls. Beat cocoa powder into one bowl

    Combine the 1 tablespoon cream with the expresso powder and beat in second bowl

    Make Frosting

    Beat butter, marscapone, vanilla coffe extract, salt and sugar until light and fluffy

    Assemble Cake

    Place one cake layer, bottom up on serving plate

    Frost with some of the FROSTING

    Top with second cake layer, bottom uo

    Cover with coffee filling

    Top with third cake layer, bottom up

    Cover with cocoa filling

    Top with last cake layer, bottom up

    Frost entire cake with remaining frosting

    Sprinkle with the sweetened cocoa powder, garnish with strawberries

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
