Rice & Stew with Veg sauce

Cooking Instructions

Perboil beef, season properly, cook till beef is soft and tender; heat up frying pan and add vegetable oil, fry beef for about 7mins and set aside

Blend tomatoes, half bulb onions, ginger, garlic and 4 pepper, steam the paste till water dries up and set aside

Reduce the oil in the pan and add tomatoes paste, fry till sour taste is gone, add fried beef, meat stock, stock cube and salt to taste, allow stew to simmer and turn off heat.

Soak the leaves in salt water for about 2 minutes then rinse severally with clean water - Chop and set aside. Rinse the onion and pepper - Chop and set aside.

In a large pan, heat up the remaining oil for about 1 minute till hot. chopped onion and pepper; add to the oil, stir fry for about 3 minutes. Gently add the stock cubes and salt to taste, stir to combine

Finally, Add the chopped pumpkin leaves and stir to combine everything. Leave to simmer for 5 minutes then turn off the burner.

Your stew and vegetable sauce is ready. Serve with Boiled rice, hard boiled egg and fried plantain
