Ingredients

  1. For Dark Chocolate Cake
  2. 1 3/4 cupall purpose flour
  3. 3/4 cupunsweetened cocoa powder, I used Hersheys special dark
  4. 11/2 teaspoonbaking powder
  5. 1/2teaspoin salt
  6. 2ups granulated sugar
  7. 2large eggs
  8. 1 cupmilk
  9. 1/2 cupcanola oil
  10. 1 teaspoonvanilla extract
  11. 1 cupbrewed coffee at room temperature
  12. For Strawberry Cream Frosting and Filling
  13. 8 ouncescream cheese, at room temperature
  14. 8 ouncesmarscapone chee, at room temperature
  15. 4 ounces(1 stick), salted butter, at room temperature
  16. 1 cupfresh strawberries
  17. 1 teaspoonvanilla extract
  18. 4 cupsconfectioner's sugar
  19. Garnish
  20. as neededpink sprinkles,
  21. 6Godiva Strawberry Cheesecake truffle candies, halved
  22. as neededfresh strawberries

Cooking Instructions

    Preheat oven to 375. Spray 3 - 8 inch cake pans well with bakers spray

    In a bowl whisk together flour, cocoa powder,baking powder and salt and sugar

    In another bowl whisk the eggs with the milk,canola oil and vanilla, beat into flour mixture until smooth

    Slowly beat in coffee until smooth batter will be very thin.

    Pour into prepared pans and bake 22 to 25 minutes until a toothpick comes out just clean. Cool 15 minutes in pan then run a thin knife around edges of cake to unstick any edges of cake and remove from pan to cool completely

    Make Strawberry Filling and Frosting

    Puree strawberries in a food processor and set adide

    Beat together in a large bowl until smooth, cream cheese, marscapone cheese, butter and vanilla

    Beat in strawberry puree

    Slowly beat in confectioner's sugar until it is a nice spreading consistancy, add drops of red food color only if you want it pinker. Refrigerate if frosting seems soft to firm it up for about 1 hour for easier spreading

    Assemble Cake

    Place 1 cake layer bottom up on serving plate add some Strawberry filling

    Add second layer, bottom side up

    Add more fillinhg

    Add third layer, bottom up

    Frost entire cake and decorate with sprinkles, Godiva Strawberry Cheesecaketruffles, halved and fresh strawberries

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
