Ingredients

  1. 11/2 cupsall purpose flour
  2. 11/4 tbspcocoa powder
  3. 2eggs 🥚
  4. 1 tspbaking powder
  5. 1/2 tsp baking soda
  6. 3/4 cupsugar
  7. 1/2 tspstrawberry extract+ 1/2 tsp vanilla extract
  8. 1/4 cupoil
  9. 1/4 cupbutter🧈
  10. 1/2 cupbuttermilk 🥛
  11. 1/4 cupraspberry puree
  12. 1 tspcinnamon powder
  13. For raspberry puree:
  14. 2-3 tbspfresh or frozen raspberries 🍒
  15. 1 tspred food colour
  16. 1/2lemon 🍋 (squeezed)
  17. 2 tbspsugar
  18. 1/4 cupwater 💦
  19. 1 tspstrawberry extract
  20. For frosting:
  21. 1/2 cupbutter at room temperature 🧈
  22. 31/2 cupssugar or 11/2 cups icing sugar
  23. 1 tspstrawberry extract
  24. 1 cupcream cheese or 11/2 tbsp regular cream
  25. For decoration: raspberries 🍒, mint leaves 🌱

Cooking Instructions

    Raspberry puree: in a blender add raspberries, lemon juice, red food colour, sugar and water, blend till smooth, sieve and keep aside. Preheat oven at 180°c, line the bottom of 8" round cake tin with parchment paper, mix together all purpose flour, baking powder, baking soda, salt and cocoa powder, keep aside, in a large bowl beat butter, sugar and eggs until creamy, add strawberry and vanilla extract mix well, add half of dry ingredients, add vegetable oil and buttermilk mix gently.

    Add remaining dry ingredients and mix well, add raspberry puree and mix well, pour in the prepared cake tin and bake for 20 mins or until skewer comes out clean, remove and keep for 10 mins, then transfer it into wire rack, let it cool completely. For frosting: in bowl add butter and cream cheese in a bowl and beat until creamy and combined and lump free, add strawberry extract and mix, add powdered sugar and beat until completely combined and spread on the cake.

    Make cake border and arrange raspberries and later add mint leaves and serve.

    Note & tips: if you like to make frosting with icing sugar, add butter and beat for 1 min, add icing sugar and beat until well combined, add strawberry extract mix well, finally add regular cream and mix well until peak form, spread on cake and decorate with raspberries & mint leaves or as your desire.
