It's my comfort food. I discovered egg suace and rice combo from my mum. This was my second time cooking egg sauce, and I made it for my boyfriend and I. Best paired with white rice (my personal opinion, though). It can be paired with yam, plantain, potatoes, bread, and even pastas.

Ingredients

2-3 people
  1. 5eggs
  2. 200N onions
  3. 300N Fresh pepper
  4. 1 tspsalt
  5. 3-4knorr cubes
  6. 600N Fresh tomatoes
  7. 2small satchet groundnut oil
  8. 1-2 tbspDry pepper (optional)

Cooking Instructions

    Chop your fresh pepper, tomatoes, and onions. Then, set aside.

    In a saucepan, pour in a moderate amount of groundnut oil and allow to heat.

    Once heated, sauté your onions and fresh pepper in the oil on low to medium heat.

    When the onions go translucent, add in your fresh tomatoes and keep stirring to prevent burning.

    Fry the tomatoes for about 8-10 minutes or until you notice it has begun shrinking.

    Season with salt, dry pepper(optional), and knorr cubes to your taste.

    Then, pour in your whisked eggs.

    As the eggs begin to form, scramble it in the pan using your (wooden) cooking spoon.

    Let it simmer in the pan for an extra minute, then turn off your gas cooker/stove.

    Ta-da! Your sumptuous egg sauce is ready to be paired with anything. Enjoy, and don't forget to spread the love.💕
