Spiral Sliced Truffle Potatoes (side dish) or appetizer

Between the two truffle oils, black and white, I found that the white truffle oil was the better one. It’s sweet, almost a sugary flavor. Coupled with salt, parsley and Parmesan, it makes for an amazing treat or side dish to a meal. Parsley & Parmesan are optional toppings!

Cooking Instructions

Using a chopstick, skewer, or something similar to these, place your potato next to it and start slicing from one end to the other. The knife will hit the chopstick, skewer, etc and not cut completely through the potato. Do this will all of your potatoes.

When you’re done, place them in a bowl, drizzle to your liking with the white truffle oil & salt. Mix.

Using my ninja air fryer grill, I set it to “Grill” at 500 degrees. Check your potatoes every couple minutes and rotate. Depending on the size of your potatoes, it should take between 8-15 minutes to cook through. When you can pierce them through with a fork or toothpick (they’re soft) then they are done. Serve as a side dish or eat on their own.
Sprinkle with parsley and/or Parmesan cheese when done if you’d like!

Merry Christmas….I hope you all had a lovely day and a delicious dinner or lunch. We had a small family gathering for lunch yesterday at my home, this year was different much quieter, not much laughing, but we have a good friend visiting from Greece and he tried to cheer everyone up with his jokes, he did have some great jokes but our spirit was just not into it with the loss.Anyway on with the recipe, I cooked with the help of my mom, we got everything done a bit quicker so I didn’t have to spend Christmas day in the kitchen. At the Christmas table yesterday we had the usual salads, potatoes, Turkey, and ohhhh I shouldn’t forget to mention that they all wanted Tzaziki added to the table. Now how in the world does this dish combine into the Christmas table I have no idea, but as they say “to each his own”.I wanted to add this lovely side dish for an extra little surprise, and they did enjoy eating it just as much as they did the Tzatziki!!
