Ingredients

  1. 1.1 lbspotatoes (about 500 grams)
  2. 1whole garlic clove
  3. 1 bunchchopped parsley
  4. 2 tablespoonsextra virgin olive oil (about 30 ml)
  5. Salt, pepper to taste
  6. 1 tablespoonpaprika
  7. 4whole eggs

Cooking Instructions

    Peel and cut the potatoes into large cubes, rinse under running water, and dry with a kitchen towel.

    In a saucepan, add the olive oil, garlic clove, and parsley. Sauté for a few seconds, remove the garlic, and add the potatoes.

    Add the paprika, salt, and pepper, and cover completely with water. Cover with a lid and cook over medium heat for about 35 minutes. When the potatoes are soft, add the eggs one at a time, cover with the lid, and continue cooking for another 3 minutes.

    Turn off the heat, let it rest for another 2 minutes, and serve the hot potato stew.
