It’s peanut digging time here in south Alabama. Whether they’re boiled, roasted, candied, fried or parched, anyway you want. This is a new recipe from a friend. #GlobalApron 2024

Ingredients

5 minutes
  1. 2 cupsdry roasted peanuts
  2. 1-2 Tbsphoney
  3. Salt, to taste

Cooking Instructions

5 minutes
  1. 1

Place peanuts in a food processor. Turn the food processor on and let it run for 4-5 minutes. During this time, you’ll see the peanuts go in stages from crumbs to a dry ball to a smooth and creamy “liquid” peanut butter. Stir in the honey and any additional salt, if you want.

  2. 2

Store in the fridge or at room temperature if you think you’ll go through it fast enough.

  3. 3

    Makes 1-1/2 cups.

I love to bake sweet stuff, with a bit of savory tasty cooking thrown into the mix. Just good ol’ southern cuisine. Most of my recipes were handed down from my Great & Grand Grannies. If they didn’t grow it or raise it, it wasn’t eaten. My hubby and I have alot of food allergies so it gets challenging sometimes to make things that we both can eat. Neither of us can eat shellfish, which is sad, considering where we live, cuz it’s everywhere! Y’all won’t find any shellfish /saltwater fish recipes here. Some fresh water fishes, maybe. Hope y’all enjoy my recipes!

Spanish peanuts still have the hull on them. I used plain parched peanuts without the hull. I think the next time I make this, I’ll use salted instead. Didn’t care for the “sweet”. The grands loved it though.
