Broccoli Cheese Soup

#GlobalApron 2024, week 39. Ingredient used; broccoli. I needed to use my milk and broccoli rather than it going to waste. I used all my cheddar cheese so I used velveeta cheese ( personally I like velveeta,(no judging). Soup is a dish you adjust to your liking. You may use less cheese and milk, add slowly until it is the consistency you want.

Ingredients

  1. 24 ouncesbroccoli
  2. 1 stickbutter
  3. 2 tablespoonscorn starch or flour
  4. 1large onion diced
  5. 1 poundcheddar cheese cubed or shredded
  6. 4-6 cupswhole milk

Cooking Instructions

    Dice onion set aside.

    Steam or boil broccoli, chop into smaller pieces.

  3. 3

    In a large pot over medium heat melt butter, add onion and cook until softened.

  4. 4

    Mix cornstarch or flour in 1/2 cup milk. Whisk until smooth, add to onion mix.

    Add 1/2 the milk, 1/2 the cheese,all the broccoli and stir until it starts to thicken (6-8 minutes).

    Add remaining milk and cheese. Stir constantly until cheese melts, turn heat to low and stir until throughly heated. Serve.
