2avocados - diced
1 lbRoma tomatoes - diced
1/2red onion - sliced
2gloves garlic - minced
2 tablespoonsolive oil
2 tablespoonslemon juice
Halfa bunch of cilantro
to tasteSalt and pepper

Cooking Instructions

Cut veggies and place in mixing bowl with cilantro

Drizzle olive oil and lemon juice

Mix and refrigerate 30 minutes

Salt and pepper to taste before eating

This is a salad I make ALL summer. This is just the basic recipe but you can think outside the box with this and add Parmesan, pepperoni, provolone, salami, additional veggies like roasted peppers or celery etc etc. Its so simple but delicious!
