Ingredients

  1. 1red onion, half moons
  2. 340 gcherry tomatoes halved
  3. 1bell pepper, cut in chunks
  4. 3 clovesgarlic, crushed
  5. 340 gpeppers in oil, sliced
  6. 1 tspOregano
  7. 60 mlolive oil
  8. 4cod fillets (or haddock)
  9. 60 mlwhite wine
  10. 20Kalamata olives

Cooking Instructions

    Heat oven to 230oC

  2. 2

    Add onion, tomatoes, oregano, garlic, olive oil, peppers (both), salt and pepper into roasting dish. Mix and roast for 20min

  3. 3

    Cut each fish fillet into two, salt, pepper and oil the fillets

  4. 4

    Add wine, olives and fish to the vegetables and continue cooking for another 12 mins

  5. 5

    Serve with giant couscous
