Ingredients

1 cake
  1. 250 mlWhipping cream
  2. 2 tablespoonsground flaxseeds or 2 eggs Ground flaxseeds or eggs
  3. 1 cupSugar
  4. 1 1/2 cupsPlain flour
  5. 2 teaspoonsBaking powder
  6. 1/2 teaspoonBaking soda
  7. 1/4 teaspoonSalt
  8. 1 teaspoonVinegar
  9. 1 teaspoonVanilla extract

Cooking Instructions

    Line a tin with greaseproof paper and set aside.

    Sieve flour, salt, baking powder, and baking soda in a bowl.

    Mix flaxseeds with 6 tablespoons of water, set aside for 10 minutes.

    Whisk whipping cream for 3 minutes. Add flaxseed mixture and vinegar, whisk.

    Gradually add sugar, whisk, then add vanilla extract.

    Fold in flour using the cut and fold method.

    Transfer to lined tin, tap to remove bubbles.

    Bake at 180°C for 30-35 minutes, until a toothpick comes out clean.

    Cool completely, remove from tin, and flip back in.

    Whisk fresh cream, spread on top, pour melted biscoff spread, level.

    Refrigerate for an hour, slice, and enjoy.

Tips

For a richer flavor, you can add a pinch of cinnamon or nutmeg to the flour mixture.
