Ingredients

12 minutes
2 people
  • Quick hot tomato relish
  • 1 tbspolive oil
  • 1/2red onion, sliced
  • 1 cup (150 g)cherry tomatoes
  • 1/4 tspsalt
  • 1/8 tspblack pepper
  • 1 tspred wine vinegar
  • 1/2avocado, in the skin
  • 20 gsalted butter, for buttering the bread
  • 2brioche buns or other soft bread rolls, split in half
  • 1 tbspolive oil
  • 180 ghaloumi cheese cut about 2 cm thick, cut in half horizontally to form 2 steak
  • 50 gbaby spinach or other leafy greens

    Smashed avocado - Use fork to roughly mash the avocado inside the avocado skin. Lump are fine. Just make it spreadable. Set aside.

    Hot tomato relish - Heat the oil in a medium pan over high heat. Add the onion, tomatoes, salt, pepper and vinegar. Cook, stirring regularly, for 3 minutes or until tomatoes are lightly blistered, wrinkled and starting to collapes. Set aside into a bowl.

    Toast bread - Return the pan to the heat. Butter the buns, then put them cut face down in a pan. Cook for 1 minutes or until golden. Transfer to serving plates.

    Fry haloumi - Heat the oil in the pan. Add the haloumi and cook each side for 1 1/2 minutes or until deep golden. Transfer to a plate.

    Assemble the burger - Spread the base of the buns with avocado. Sprinlkle with pinch of salt. Pile on the spinach, top with haloumi, then the tomato relish. Top with the bun.
