Smashed avocado - Use fork to roughly mash the avocado inside the avocado skin. Lump are fine. Just make it spreadable. Set aside.

Hot tomato relish - Heat the oil in a medium pan over high heat. Add the onion, tomatoes, salt, pepper and vinegar. Cook, stirring regularly, for 3 minutes or until tomatoes are lightly blistered, wrinkled and starting to collapes. Set aside into a bowl.

Toast bread - Return the pan to the heat. Butter the buns, then put them cut face down in a pan. Cook for 1 minutes or until golden. Transfer to serving plates.

Fry haloumi - Heat the oil in the pan. Add the haloumi and cook each side for 1 1/2 minutes or until deep golden. Transfer to a plate.

Assemble the burger - Spread the base of the buns with avocado. Sprinlkle with pinch of salt. Pile on the spinach, top with haloumi, then the tomato relish. Top with the bun.

Notes: Red wine vinegar substitute with lemon juice, white wine vinegar, balsamic vinegar or sherry vinegar.
