Red velvet pancakes w/ fried plantains 😃

My mother made me my first red velvet cake for my fifth bday! Right about to cut my cake the phone rings 😲 I hear my mother say “it’s a girl !!” So these 2 things I love ❤️ and every year on my bday that’s what she made for me 🥳 and my lil cousin was always my fav 😉

First mix all dry ingredients into a bowl. Separate egg yokes and whites and set aside. Add the yogurt and just 1/2 c of milk (you can use buttermilk and omit the vinegar) mix in the egg yolks. Mix into dry ingredients. Take the whites and using a hand mixer beat on high until soft peaks form (I forgot to take pics) if the batter is too thick slowly add in the rest of the 1/2c of milk.

Take the whites and gently fold into the batter mixture with a plastic spatula. When all combined Let sit for 2-3 mins.

Start your frying pan on med and spray the bottom with oil. I use soya. Pour about 1/4-1/2 cup of batter into the pan. When you see bubbles start getting ready to flip it! When you flip it should be golden brown. If too dark durn down a little. This time I took pics

This should make 12 if using 1/4 of a cup of batter or 6 if 1/2c. Mine was 6. Sprinkle with powder sugar.

Next 2 plantains peel and slice in half long and then in half the other way so you have 4 pieces from one

I use palm oil for the flavor but choose your oil and put in about 1/8 of a cup. Turn on to about a medium heat. Sprinkle salt on all and when they start to brown flip over. They should be soft on the top so I take my fork and flatten them just a little bit. Then turn down just a little bit and cover to keep moisture in. After about a minute they should be ready! Beautiful golden color 😃
