Made this up on the fly one day when I ran out of salsa at my party. Look out Tostitos!!
Cooking Instructions

Rinse and seed jalapenos. Then mince.

Peel onion and garlic. Dice onion and mince garlic.

Rinse and chop cilantro.

In bowl add pepper, garlic, onion, cilantro, vinegar, juice, and rotel. Stir together then chill until ready to serve.

For more spice use serrano peppers in place of jalapenos.

For chunky style add 2-3 diced roma tomatoes

Lastly if you like more of lime flavor cut the vinegar and use juice from 1/2 lime instead.

Quick Salsa
I suppose it would be easier to put the tomatoes, bell pepper, etc. to a food processor and pulse for a few seconds. But since I don't have one, I have to do it the old-fashioned way--slice and dice them manually! I call this quick salsa because I just slice and dice vegetables that I found in my fridge. If you only have tomatoes and onions, that would work, too.

Some added tips.This makes on average a little over a pound of salsa. No more than 2.When picking your veggies and peppers make sure they have tight skin. An old, wrinkled, or damaged pepper will be hard to peel.You can remove or add peppers to you spice level.Use wet paper towel to help remove pepper skin that is stuck to your fingers.I use vine tomatoes. Or Roma.Most of the time it's "al tanteo" so follow your instincts when it comes to adding or removing something. You end up with more salsa though.
