Ingredients

  1. 1 cupsgranulated sugar
  2. 1 cupvegetable oil
  3. 3eggs
  4. 2 cupsall-purpose flour
  5. 2 teaspoonsground cinnamon
  6. 1 teaspoonbaking soda
  7. 1 teaspoonvanilla
  8. 1/2 teaspoonsalt
  9. 3 cupsshredded carrots (5 medium)

Cooking Instructions

    Heat oven to 350°F. Grease pan with butter. In large bowl, beat granulated sugar, oil and eggs with electric mixer on low speed about 30 seconds or until blended or use a hand whisk.

    Add flour, cinnamon, baking soda, 1 teaspoon vanilla extract and the salt; beat on low speed 1 minute. Stir in carrots. Pour into pan.

    Bake for 30 to 35 minutes, or until toothpick inserted in center comes out clean. Cool for about 10 minutes; remove from pans to cooling rack.
