I had this dish back in 1994 when I was studying in Brisbane. I used to go to my favourite chinese restaurant in Fortitute Valley. 17 years later I came back to Brisbane and found out that the restaurant has been closed. I tried to deconstructed the recipe and finally after many attempts I found a recipe for this dish! happy days!

Ingredients

Serves 4 servings
  1. 500 gbeef eye fillet
  2. 2 tspoil
  3. 2 tbswater
  4. tspcornflour
  5. 2 tbscornflour extra
  6. 1large carrot
  7. Oil for deep frying
  8. Sauce:
  9. 1 tbsoil
  10. 1green shallot, sliced
  11. 1garlic, sliced
  12. 1/4 tspchopped fresh chilli
  13. 3 tspwhite vinegar
  14. 2 tspdry sherry
  15. 2 tspdark soy sauce
  16. 1 tbswater
  17. 2 tspsugar
  18. 1 tspsesame oil

Cooking Instructions

    Remove fat and sinew from beef; slice beef thinly, then cut into fine shreds.

    Combine beef with oil, water and cornflour. Cover, marinate for 30 minutes.

    Slice carrot thinly, cut into fine strips. Heat oil for deep frying in wok, add carrot, cook until slightly browned, remove from wok, reserve.

    Reheat oil, add meat cook a few minutes until tender, storing gently to separate meat and drain.

    Heat oil again. Sprinkle extra cornflour over the beef. Deep fry beef again in a hot oil until brown; drain.

    Add to sauce with reserve carrot, reheat throughly before serving immediately.

    Sauce:

    Heat oil in wok, add shallot, garlic, chilli and add remaining ingredients, bring to a boil, stir in beef and carrot.
