Ingredients

Serves 6 servings
  1. For the dough:
  2. 500 gap flour
  3. 90 mlextra olive oil
  4. 200 mlwarm dry white wine
  5. 2 tspsalt
  6. For the stuffing:
  7. 350 gboiled spinach
  8. 350 gricotta cheese
  9. 1egg
  10. 100 ggrated parmigiano reggiano or grana cheese
  11. Salt and pepper
  12. Breadcrumbs

  1. 1

    Mix all the ingredients for the dough and work the dough until it become uniform (using mixer or not).

  2. 2

    Cover it with plastic wrap while preparing the stuffing.

  3. 3

    Boil the spinach and squeeze it to eliminate the water. Cut it with a sharp knife to facilitate.

  4. 4

    Mix it with ricotta cheese, add egg, grated cheese and salt & pepper. Combine all the ingredients.

  5. 5

    Preheat the oven 180 C

  6. 6

    Divide the dough in two, Create 2 circle of 30 cm using rolling pin. Place 1st dough circle on baking paper. Spread some breadcrumbs on it.

  7. 7

    Place part of the stuffing in the centre of the circle and remaining creating another circle around.

  8. 8

    Cover it with the 2nd circle of dough. Wet the borders and attach one to another using fork.

  9. 9

    Place a small bowl over the central stuffing and punch with fork all around. Using sharp knife cut the border in 3 cm / 1.2 in slices. Turn them upside 90 degree.

    Bake for 30 minutes in preheated oven 180 C.
