Ingredients

  1. 6Parsnips, peeled & cut into 2 inch pieces
  2. 6Leeks, washed & cut into 2 inch pieces
  3. 2ribs Celery, cut into 1 inch pieces
  4. 1 mediumOnion, chopped
  5. 2 cloveGarlic, minced
  6. 3 tbspBacon fat
  7. 6 cupHam stock
  8. 1 1/2 tbspLiquid Smoke, more or less per your taste
  9. 1 canBeer (non-citrus) Chicken or Beef broth can be used as a substitute.
  10. 1Red Pepper flakes, to taste
  11. 1Salt & White Pepper, to taste
  12. 1 cupHeavy cream
  13. 16 ozShredded VELVEETA Cheese (it melts creamy instead of oily)
  14. 4strips of Bacon, cooked crispy & crumbled
  15. 2 tbspChives
  16. 1Sour cream, to taste (optional)

Cooking Instructions

    Boil first 11 ingredients in a large stock pot. (Parsnips, Leeks, Celery, Onion, Garlic, Bacon Fat, Ham Stock, Beer, Red pepper flakes, salt, pepper & liquid smoke)

    Boil/simmer covered until all ingredients are VERY tender & broken down..

  3. 3

    Puree mixture in a food processor until smooth.

  4. 4

    Return to pot. Bring to a low simmer.

  5. 5

    Add Heavy Cream & mix with a whisk.

  6. 6

    Stir in shredded cheese & mix until cheese is melted on low temp. Be careful not to let bisque stick to pot!

    Place in serving bowls.

  8. 8

    Top each bowl with Bacon crumbles & Chives.

  9. 9

    (Optional)-Place a dollop of sour cream on the side of serving bowl if you wish.
