  • 5 tbspButter
  • 2 tbspSweet Onion (Finely Chopped)
  • 1Celery Stalk (Finely Chopped)
  • 3 ozCarrot (Finely Chopped)
  • 1/4 cupWhite Flour
  • 32 ozSeafood Stock
  • 6 ozTomato Paste
  • 1/4 cupWhite Wine or Cooking Sherry
  • 1 cupHeavy Whipping Cream
  • 1 cupHalf & Half
  • 2 tspWorcestershire sauce
  • 1Garlic Clove
  • 1 tspPaprika
  • 1 tspThyme
  • 1 lbLobster (chopped)

Steps

  1. 1

    Very finely chop the onion, celery & carrot. The finer, the better.

  2. 2

    With a large pot on medium heat, melt butter and then add the onion, celery & carrot. Cook until soft.

  3. 3

    Add flour. Cook/stir until roux bubbles

  4. 4

    Add the rest of the ingredients except for lobster meat. Stir until you get desired thickness.

  5. 5

    Add lobster meat. Stir and cook long enough for meat to cook.

  6. 6
