Just to make this jollof rice look beautiful had to slice the onions on it.

Ingredients

  1. 5 cupsrice
  2. 1/2 kgFresh tomatoes
  3. Salt
  4. HandfulTatasi
  5. 4onions
  6. Ikg chicken
  7. 1/2 kgGroundnut oil
  8. 1 teaspoonCurry
  9. 1 teaspoonthyme
  10. 1/2 teaspoondry ginger
  11. 1turmeric
  12. 2knorr seasoning

Cooking Instructions

  1. 1

    Boil rice for 15mins.sieve out water and wash.

  2. 2

    Boil chicken with Maggi,Salt,onion,thyme and curry.boil for at least 30mins.

    Blend tomatoes,ginger,turmeric and tatasi.

  4. 4

    Remove the seeds inside the tatasi before blending.

    Fry the chicken with groundnut oil.fry till is brown but not burnt.

    Bring down the groundnut oil,allow it to cool.take the quantity needed and place back on fire.

    Pour in the tomatoes paste.and fry for 10mins or less but keep stirring.

    Pour in the chicken stock and add more water.leave it to boil very well.

    Add curry,onion,Maggi,salt and pepper.

    Boil very well.stir and pour in the rice.

    Use wooden spoon and mix very well.and allow it to boil.

    Check when the water drys by using a clean dry spoon and insert in the middle if it comes dry is done.

  13. 13

    Slice onions on top when serving.
