My family loves the stuffing at Thanksgiving enough to ask for it year round, here is a bite size version stuffed in a mushroom!

Ingredients

  1. 10large button mushrooms, stems removed, save and chop stems
  2. 6 slicebacon
  3. 2sliced raw breakfast sausage
  4. 6 slicepepperoni
  5. 1/4 cupchopped onion
  6. 2 Tbspchopped celery
  7. 1 Tbspchopped carrot
  8. 2minced garlic cloves
  9. 1 cupdry herb stuffing bread crumb mix, such as Stove Top or Pepperidge farms brands
  10. 1/2 cuplow sodium chicken broth
  11. 1 Tbspbutter
  12. 1 Tbspcream, any type you have, even whole milk will be fine
  13. 1/4 tspblack pepper
  14. 1 tsphot sauce, such as franks brand
  15. 10thin slices cherry tomato
  16. 1-3/4 cupshredded mixed cheeses, I used italian four cheese blend and sharp cheddar
  17. 1for garnish
  18. 1/4 cupchopped green onions
  19. 1 tspred pepper flakes, optional

Cooking Instructions

    Preheat oven to 400°F. Spray a baking dish large enough to hold mushrooms in one layer with baking spray.

    In a skillet cook pepperoni, bacon and sausage until sausage is cooked and pepperoni and bacon are crispy, remove as done to rest on paper towel lined plate.

    Into same skillet add the chopped mushroom stems, celery, onion and carrot. Soften in the oils left by the meats, add garlic, cook just a minute then add chicken broth, butter, cream, pepper and hot sauce. Bring to a boil, add stuffing, turn off heat and gently combine.

    Reserve half of bacon to top mushrooms with. Crumble remaining bacon and pepperoni and add to stuffing mixture also add sausage and 1 cup of the cheese, combine gently.

    Fill each mushroom cap evenly with stuffing / cheese mixture. Top each with a cherry tomato slice, then evenly top mushrooms with remaining cheese, finally add bacon and secure topping with a toothpick.

    Bake about 35 to 40 minutes until mushrooms are tender and hot.

    Garnish with green onions and red pepper flakes if using.

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
