We were camping and had left overs coming out of our ears. We decided to use some up, and had the best stuffed mushrooms ever! These are very rich, and filling! And sooooo quick and easy! I took the photo before I melted the topping tho. :(

Ingredients

  • 4 largePortobello Mushrooms
  • 1/2 cupCream Cheese
  • 2 cupPrepared Chicken Stuffing (I used Stove Top brand)
  • 1/4 cupGreen Onions (coarsely chopped)
  • 1/2 lbGround Beef
  • 1/2 cupColby Jack Cheese
  • 1/4 cupmozzarella cheese (for topping)

    Crumble and brown ground beef in a skillet. Drain fat.

  2. 2

    Stir all other ingredients (except mushrooms) together in a bowl, microwave for about 30 seconds, or until cheeses are turning it into a gooey mess.

    Stir mixture then fill the mushrooms. Top with Mozzarella cheese.

  5. 5

    Put on outdoor grill (low setting - about 300 degrees) for about 10 minutes so the mozzarella cheese melts. You can also pop into the oven at 300°F until melted. Or even the microwave.

    Let cool before eating. Mushrooms get HOT inside!
