Ingredients

  1. 1/2ripe avocado
  2. 2slices of multi grain bread
  3. lettuce leaves
  4. 4 slicebacon
  5. 3 slicetomato
  6. 2eggs
  7. 1/2 tspvinegar
  8. pinchsalt & pepper

Cooking Instructions

    Bring water and vinegar to a boil in a small pot.

    Heat pan and cook bacon slices.

  3. 3

    Slice avocados and tomatoes. Set aside

  4. 4

    Toast bread slices.

  5. 5

    Gently put eggs into boiling water. Turn off heat immediately.

  6. 6

    Assemble ingredients together by placing avocado slices on toast first followed by tomato slices, 2 strips of bacon on each slice of bread, lettuce leaves, and poached eggs. Finish with a pinch of salt and pepper.

This was soooo delicious!! I did use arugula instead of lettuce just cause I had it 🙂. It’s a keeper!!
