After making my flourless chocolate cake, I have begun experimenting with different flavors for that basic recipe. I love how light this tecipe is and this spice version is just as light and is full of warm fall flavors! It is,also easy and,quick to.put together.

Ingredients

  1. Cake
  2. 8 ozcinnamon chips melted over a double boiler or carefully in microwave until.smooth ( I used Hershey brand )
  3. 8large eggs, separated when cold ( it is easier to separate them cold ) Then brought to room temperature
  4. 2 tbspsour cream
  5. 2/3 cupgranulated sugar
  6. 1/2 tspground cinnamon
  7. 1/2 tsppumpkin pie spice
  8. 1/4 tspsalt
  9. 1 tspvanilla extract
  10. 1/4 cupadditional cinnamon chips to sprinkle on batter, optional
  11. Whipped Cream and Cinnamon Sugar, recipes attached below

Cooking Instructions

    Preheat oven to 350. Spray a 10 inch cake pan generously with non stick spray. Set prepared pan on a foil lined sheet pan. Set aside.

    In a large bowl beat egg whites until they hold stiff peaks

  3. 3

    In another large bowl combine egg yolks,with sour cream, sugar, vanilla, ground cinnamon, pumpkin pie spice and salt, best until light and fluffy. Best in melted cinnamon chips until well combined.

    Add a third of the egg whites to the yolk mixture and fold in to lighten. Add another third and fold in and then the final third and gently fold until combined..Pour into prepared pan. Sprinkle top with the.1/4 cup additional cinnamon chips if using

    Bake for about 30 minutes just until a wooden pick comes out clean. The cake will rise quite high but will deflate some while cooling. Cool.in pan 15 minutes then run a small sharp knife around edges to release any parts that stick and cool another 30 minutes before removing from pan

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
