Ingredients

  1. 2eggs
  2. 1/3 cupcanola oil or vegetable oil
  3. 1 cupcultured buttermilk
  4. 1 tspvanilla essence
  5. 2 cupsifted self raising flour
  6. 1/2 cupcaster sugar
  7. 1 cupwhite chocolate chips
  8. 1 cupfrozen raspberries

    Preheat fan forced oven 170°C.

    Place 12 muffin liners in a 12 tin muffin tray.

    In a bowl, combine eggs, oil, buttermilk, and vanilla.

    Add flour, sugar, and chocolate in the bowl and combine. Do not over mix.

  5. 5

    Mix in raspberries but don't let it melt too much.

  6. 6

    Spoon mixture in tray and bake in oven for 30 minutes.
