Eggs with Fried Tomatoes

I tried this recipe at a Greek restaurant during lunch, and it tasted amazing. I figured out how to make it and recreated it with the same deliciousness I experienced at the restaurant. Let's see how it's made!

Cooking Instructions

Prepare 4 eggs; you can increase the number based on the number of people.

Chop a large onion and a hot or sweet pepper, and sauté them over heat until they are somewhat browned.

Chop the cilantro, dill, and two mint leaves into small pieces, and slice the tomatoes into thick slices as shown in the picture.

Once the onion and pepper are browned and softened,

Move the pan to a smaller burner, place the sautéed mixture around the edges of the pan, and add the tomatoes in the center. Fry them on both sides.

The more the tomatoes are fried, the sweeter the dish will taste.

Using a spoon, without stirring the mixture, place the sautéed mixture between each tomato slice as shown in the picture.

Then add the eggs between the tomato slices. It's best if the eggs are cold before use to prevent them from bursting and to keep the yolks intact, giving the dish a nice appearance. Then sprinkle the chopped vegetables on top.

It's best not to transfer it to another dish and to eat it as is in the pan. In the restaurant, they prepare it in clay dishes and serve it as is in the clay dish it was cooked in. Add salt and black pepper when eating.
