Roasted Tomatoes and Eggs

Ingredients

3-4 servings
  1. 3large vine ripened tomatoes
  2. 1 teaspoondried basil
  3. 1-1/2 teaspoonsalt
  4. 1/2 teaspoongranulated garlic powder
  5. 1/2 teaspoonground white pepper
  6. 4large eggs
  7. 3 tablespoonextra Virgin olive oil
  8. to tastesalt for eggs

Cooking Instructions

  1. 1

    Preheat oven 400 degrees Fahrenheit

  2. 2

    Scramble the eggs try not to get any color on them when cooking them.

  3. 3

    Set the eggs aside

  4. 4

    Cut the tomatoes into wedges. Add salt, basil, garlic, and oil.

  5. 5

    Roast in oven for 20-25 minutes

  6. 6

    Put tomatoes on a plate and add eggs on top. Serve I hope you enjoy!
