My friend and I have always loved cucumber and cream cheese sandwiches. We needed something new, so we found a recipe from one of my mom's cookbooks.The dill weed is optional; it adds a good flavor, but it is super flavorful without it, too.I like to make a double batch of this and make them for my work lunches.Whipped cream cheese is easier to blend with the other ingredients. But I take my cream cheese brick out and let it soften while I get everything else together.

I'm always trying to come up with easy yet yummy appetizers that can easily get tossed on the table with little effort but a lot of taste. These cucumber slices are simple but very tasty! My huge tray was emptied and I doubled the recipe.

I adopted a recipe that I saw in a book about 10 years ago.※ If you can, use premade pickling spice to make authentic and spicy pickles. My mother used to make a similar recipe when I was younger. I was never able to get the recipe from her so this is the best recreation of it.

The only thing i do differently on the recipe is i use one large seedless cucumber, around 12" and omit the tomatoes. Very tasty side dish, enjoy!
