My friend and I have always loved cucumber and cream cheese sandwiches. We needed something new, so we found a recipe from one of my mom's cookbooks.
The dill weed is optional; it adds a good flavor, but it is super flavorful without it, too.
I like to make a double batch of this and make them for my work lunches.
Whipped cream cheese is easier to blend with the other ingredients. But I take my cream cheese brick out and let it soften while I get everything else together.

I go through weird cooking cravings. I'll go weeks at a time where all I want to do is bake, then I'll switch to wanting to pan cook, then switch to crock pot!
