Ingredients

  1. eggplant
  2. 1 largeeggplant, aubergine
  3. 1/3 cupbutter
  4. 1/4 cupolive oil, extra virgin
  5. 1 tbspgranulated garlic powder
  6. 1 tspground black pepper, freshly cracked
  7. 1/2 tspsalt
  8. onions
  9. 1/3 cupbutter
  10. 1/2 tspsalt
  11. 1 tspground black pepper
  12. 2 tbsprice vinegar
  13. 1/4 cupMichiu or white wine, optional
  14. 4 cuponion, chopped
  15. cheese
  16. 2/3 cupsliced chunky mozzarella cheese
  17. garnish
  18. 1 1/2 tbspparsley flakes

Cooking Instructions

    Preheat oven 400° Fahrenheit

  2. 2

    Peel and slice the eggplant. Add salt, pepper and smudge with butter the top of each slice. Put into oven.

    Melt butter add onions, salt, pepper, and garlic. Sauté 10 minutes add wine and , or vinegar. Stirring constantly. When the liquids are gone its done.

    Bake 15 minutes add oil around the pieces. Bake 10 minutes add onions bake 15 minutes.

    Add cheese and parsley bake 20 minutes.
