Cooking Instructions

Poke some holes in squash and place in microwave for 10 mins. On high.

Flip and repeat for 10 more mins. Will be Very Hot.

Remove and cover with foil. Let cool enough to handle.

Slice length wise and remove seeds. Remove pulp. The skin should literally peel off. If still hard, microwave 5 more mins.

Add pulp to remaining ingredients and mash with fork. Should be very soft. Serve or reheat later.

I was craving soup one day and came up with this while making it. It's very hard to mess up. You can play around with it too. You can use Sage which is more classic in butternut squash soup instead of rosemary and thyme. You can play around with it to suit how you like it.
