preheat oven to 400°

cut butternut squash ends off and discard. Peel squash and cut lengthwise. With a spoon remove seeds

cut squash into cubes and place them on a baking sheet

add melted butter, Brown sugar, salt and pepper

toss all ingredients together and speed out on a single layer on the baking sheet

roast for about 45 minutes, until squash is tender, and glaze begins to caramelize

torn the squash several times with a spatula while roasting

serve hot

Well, autumn is among us and we are being bombarded with gourds. The good thing about them is that they keep for a long time and you don’t have to know what you’re going to do with them immediately. So, after I let this marinate on top of the fridge for a week, I came up with this.
