  1. 2 mediumbutternut squash
  2. 6 tbspunsalted butter, melted and cooled
  3. 1/4 cuppacked brown sugar
  4. 1 1/2 tspkosher salt
  5. 1/2 tspblack pepper

    preheat oven to 400°

    cut butternut squash ends off and discard. Peel squash and cut lengthwise. With a spoon remove seeds

  3. 3

    cut squash into cubes and place them on a baking sheet

  4. 4

    add melted butter, Brown sugar, salt and pepper

  5. 5

    toss all ingredients together and speed out on a single layer on the baking sheet

  6. 6

    roast for about 45 minutes, until squash is tender, and glaze begins to caramelize

  7. 7

    torn the squash several times with a spatula while roasting

  8. 8

    serve hot
