Nacho cheese Dorito casserole
There are many versions of this on Pintrest and this is my version! You could also use ground beef or (other ground meat) with half a pack of taco seasoning, which I will be trying next! The topping are endless and it can be altered to your liking. I used lowfat/fat free ingredients where I could to make it a little bit healthier.

Cooking Instructions

Heat oil in small skillet. Add shallot and garlic. Cook about 2 minutes, until fragrant.

Combine soup and milk in LG bowl.

Add chicken, shallot garlic mix, seasoning, corn, beans, queso, rotel, sour cream, 1/2 shredded cheese to soup mix. Mix evenly.

Combine both flavors of doritos in LG ziplock bag and crush, using your hands or rolling pin.

Preheat oven to 350.

Spray LG casserole dish with cooking spray.

Spread 1/2 crushed doritos on bottom of greased dish. Add bean, corn, cheese mixture ontop. Top with other half of crushed doritos and the other half of cheese.

Bake for 30 minutes.

Top with whatever toppings you'd like and enjoy!

Remove from oven. Let cool for 5-10 minutes.

I have three sons (9,7,and 2) and a daughter (1).I try to have dinner ready to eat by the time my husband comes home, but that doesn't always work. So my sister-in-law sent me this recipe because it's very easy and quick to make. We love it and I change the salsa and add diced onions and/or diced bell peppers at times. I always double the recipe and make two pans. Hope you enjoy! ! 😄
