Ingredients

10 servings
  1. FOR PIE CRUST
  2. 1 1/2 cupFinely crushed oreo cookies, filling included, I used the food processor to crush. (approximately 22 to 24 cookies )
  3. 3 tbspmelted butter
  4. FOR PIE FILLING
  5. 1/2 cupheavy whipping cream
  6. 32large marshmallows
  7. 1/4 cupgreen cream de menthe
  8. 3 tbspwhite cream de cocoa
  9. 1/4 tspgreen food coloring liquid or a few drops of gel coloring
  10. 1 1/2 cupchilled heavy whipping cream
  11. FOR GARNISH
  12. Sweetened whipped cream
  13. Chocolate shavings

Cooking Instructions

    FOR OREO CRUST

    Combine oreo crumbs and melted butter,press in a 9'inche pie crust and up sides.

    Bake in a 350 oven for 10 to 12 minutes until lightly crisp, cool

    FOR PIE FILLING

    In a saucepan combine the 1/2 cup heavy cream with marshmallows, cook over medium heat stirring all the time until melted. Transfer to a bowl, add cream de menthe and cream de cocoa and cool to room temperature.

    In a large chilled bowl beat the 1 1/2 cups chilled heavy cream to soft peaks, beat in cooled marshmallow mixture until thick and blended, mound into pie crust and chill for 8 hours or overnight to set.

    GARNISH with sweetened whipped cream and chocolate shavings before serving.

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
