Sauté salad

I had a few extra veggies in the fridge and didn't want anything to go bad, so I thought the combination sounded worth a try. Make sure the button mushrooms go in raw. They help to soak up some of the excess juices from the other vegetables and add a delightfully light texture to the mix :)

Cooking Instructions

Sauté chopped onion and sliced bell peppers in olive oil until browned and spinach until thoroughly wilted. These items cook fully at different rates, so cook them individually.

Place sautéed veggies in a medium mixing bowl. Slice raw button mushrooms into bowl and mix well.

Add salt to taste. Serve warm over rice or alone.
