Ingredients

2-4 servings
  1. 4-6 ozHalf spring half baby salad mix, washed and dried
  2. 1pink lady apple, quartered, sliced then cut crosswise
  3. lime juice
  4. 2-3 ozdill havarti, sliced and cut in small rectangles
  5. 2-3 tbspraw pepitas
  6. Creamy Thai salad dressing
  7. Creamy Thai Salad Dressing
  8. 1/4 cuphomemade Mayonnaise
  9. 2 tbspcup creme fraiche
  10. 2 tbspheavy cream
  11. 2 tbspsour cream
  12. Juice of 1/2 a lime
  13. lime zest
  14. 1-2 tbsprice vinegar or champagne vinegar
  15. 1 tspagave
  16. 1 tspThai red curry paste
  17. 1 tspDijon mustard
  18. sea salt & pepper

Cooking Instructions

30 mins
  1. 1

    Prepare ingredients. Wash salad greens. Cut up apples and havarti.

    Squeeze lime juice over sliced apples.

  3. 3

    Mix together ingredients for salad dressing in a small bowl. Adjust salt and pepper as preferred.

    Assemble salad ingredients in a large bowl.

  5. 5

    Plate the salad in individual servings and drizzle with dressing.
