This is a basic recipe. Add spices as you wish. I like the sriracha for heat, but you could do green chilies, cayenne pepper, jalapeno, etc. or just do garlic & lemon juice. Lots of possibilities.

Ingredients

  1. 1 lbMock crab, chopped or flaked
  2. 1/2 cupCelery, diced small
  3. 1/2 cupSweet onion, diced small
  4. 1/2 cupRed bell pepper, diced small
  5. 1/2 cupBlack olives, sliced
  6. 1 cupShredded cheddar cheese
  7. 3/4 cupMayonnaise
  8. 1/4 cupMilk OR water (to thin mayo a bit)
  9. 1/2 tspEach, salt & pepper
  10. 1 tspDill weed
  11. 3 tbspSriracha sauce, optional

Cooking Instructions

    Dice crab and veggies. Place in a large mixing bowl with the cheese and olives.

    In a separate bowl, mix the remaining ingredients for dressing. Add a bit more milk or water as needed to thin the mayo.

    Mix dressing with crab mixture. Cover and refrigerate until ready to serve.

    Serving suggestions: use as an appetizer with crackers, chips, or toasted bread. Make a simple sandwich. Place on your favorite bread, butter the outsides and toast in a pan for a crab melt, heat and serve over pasta or rice. Add some artichokes and heat for a hot appetizer dip. Cook potatoes, scoop out the inside of potatoes and mix with some of the crab salad. Spoon back into the potato shells and bake for 20-30 minutes for twice baked potatoes.

I used Miracle Whip instead of mayp, so it would have more tang and your basic recipe is excellent!
