Ingredients

  1. 12skinless chicken thighs or drumsticks
  2. olive oil
  3. 1white or red onion
  4. 4medium peeled potatoes
  5. 1 cancannelini or berlotti beans
  6. 3 canchopped tomatoes
  7. 2 tspsugar
  8. 1/2 tspdried oregano
  9. to tastesalt & pepper
  10. 4bay leaf
  11. fresh lemon juice

Cooking Instructions

    Set oven to 180 C / 360°F Drizzle a roasting dish or casserole with olive oil

  2. 2

    Thinly slice onion & scatter into dish

  3. 3

    Cut potatoes into 2 inch chunks and place in dish (you can parboil for 5-10 minutes if you want)

    Arrange chicken in dish.

    Drain beans and add to dish along with the oregano, drop bay leaves on top

  6. 6

    Sprinkle with sugar and seasoning.

  7. 7

    Pour tomatoes over everything

  8. 8

    Place in oven and cook, uncovered, for approximately 1 hour until chicken and potatoes are cooked through.

    Immediately before serving remove & discard bay leaves, give a gentle stir,

    Sprinkle lemon juice over top

  11. 11

    Serve with focaccia or other crusty bread to soak up sauce

  12. 12

    You can add a chicken boullion cube at step 7. for extra flavour

    Can also be made with lamb chops or cutlets

    You can use tinned potatoes at step 3

  15. 15

    You can add a handful of black olives just before serving.

When I left school I trained as a chef,worked in 5*London hotel for a few years.Drifted into transport planning,retired, do most of the cooking at home.Now have more time to play (experiment) in the kitchen, like to add my own twist to recipes ( my wife calls it 'tampering'!) bake bread and make / decorate novelty cakes for family and close friends.Two daughters and three grandchildren. Celebrated Ruby wedding anniversary with wife Pam 2014.
