Muddle lime quaters with white sugar in a jar add vodka cover with lid and shake stand a few minutes then strain into a pouring jug.

Pat dry scallops and sprinkle with black pepper.

Heat oil in pan over high heat and sear scallops on each side for about 30 seconds.

Remove scallops from pan and place in serving spoons drizzle with lime dressing and garnish with Chilli, coriander, and lime
