When I was pregnant with my oldest, there was a lil Italian place near our home that made the BEST vodka sauce I had ever eaten. I have spent 22 years trying to replicate that sauce, and if my family's obsession with this dish is any indication, I not only succeeded, I surpassed it! Hope you enjoy!

Ingredients

  1. 2 cansCrushed Tomatoes, 28 oz each
  2. 1 cantomato paste, 6 oz
  3. 1 cupminus 2 tbsps good quality vodka
  4. 1 halfvadalia onion, sliced in strips (or more to taste)
  5. 3 clovesfresh garlic
  6. 4 ozProsciutto, sliced in thin strips
  7. Few sprinkles each of pepper, kosher salt, garlic salt, sugar
  8. Up to 1qt HEAVY CREAM (must use heavy for correct consistency)

Cooking Instructions

    In a large saucepan, saute onions and garlic in olive oil, over medium heat, until soft

    Add prosciutto and cook about 1 minute

  3. 3

    Add vodka, turn UP heat to med-hi, and cook until booze burns out, about 7 minutes

    LOWER heat to medium-low and add crushed tomatoes and paste, stir

  5. 5

    Add pepper, salts, and sugar, stir

  6. 6

    Turn UP heat until boiling (watch!) then lower heat to low. Cook 1 hour, stirring occasionally

  7. 7

    Add cream, half a cup at a time until desired flavor is reached. I usually use just under a full quart

  8. 8

    Let simmer until bubbling, and add any extra salt or pepper desired. Stir. Turn off heat

  9. 9

    Add pasta and serve immediately. This makes enough sauce for about 2 lbs pasta. Enjoy!

im an italian mom from nj with 3 very fussy eaters...3 kids (ages 16, 20 & 24) :D very hard to find dishes they all agree on, and now my oldest became a vegetarian so even harder! lol. but love this app and all the great people! i love cooking for and spending time with my family. all things beauty, true crime books and shows,and I'm very interested in homeopathic and natural cures, and living a positive and grateful life... and im a diehard NY Ranger fan.oh, and i LOVE bacon! so thats me :-)
