Leftover Roasted Pork on Cuban Bread

Had a bunch of pork loin leftover. A loaf of Cuban bread is about a meter long. What would you do, a sandwich?? Ahhh yes! Indeed it was so very delicious!!!

Ingredients

  1. Pork Marinade---------------
  2. 1/2 cupChinese Black vinegar
  3. 1/2 cupsugar
  4. 1/4 cupHeinz Tomato Ketchup
  5. 1 tablespoonsalt
  6. 1 tablespoongranulated garlic powder
  7. 1 teaspoononion powder
  8. 8 poundpork loin boneless marinade one leave the other plain
  9. Cuban bread-----------------
  10. 1 loafCuban bread
  11. 2 stickbutter
  12. 2 tablespoonsgranulated garlic powder
  13. Sandwich--------------------
  14. 1medium vine ripened tomato
  15. To tastesalt and pepper
  16. 1 tablespoonyellow prepared mustard
  17. 1 tablespoonmayonnaise
  18. Carrots and water
  19. 2 poundscarrots
  20. 1 quartwater
  21. 1 teaspoonsalt
  22. Cheese
  23. 1/3 cupshredded Swiss or mozzarella cheese

Cooking Instructions

  1. 1

    First day: preheat oven 375 degrees Fahrenheit

  2. 2

    Marinate half the pork loin in the marinade for 2 hours. Add teaspoon of salt to the other one.

  3. 3

    Set both loins in a roaster with carrots and 1 quart of water. Roast for 2 hours. Eat and take the leftovers and put into the refrigerator.

    Split the bread lengthwise. Butter the bread with the garlic and butter mixed bake in oven till crispy. Eat some of the bread.

    Wrap the leftover bread in aluminum foil and put into a ziploc bag and refrigerate overnight.

    Second day: toast the bread in a pan till browned.

    Move to a plate

    Break some of the pork up and fry in a pan

  9. 9

    Wash and slice a tomato

  10. 10

    Get the pork really crispy and stir often.

  11. 11

    Mix the mayonnaise and mustard

  12. 12

    Add to two slices of Cuban bread.

    Add tomato and salt and pepper

  14. 14

    Add the crispy pork

  15. 15

    Add Swiss or mozzarella cheese.

  16. 16
