Vietnamese spring rolls and spicy dip
Very light and healthy great for summer dining
Cooking Instructions

Chop veg and set up for making spring rolls
- 2
Cook noodles for 4 mins then run under cold water to halt cooking drain well and set aside
- 3
In a separate dish put in warm / hot water to soften rice paper
- 4
Place rice paper on chopping board
- 5
Add some noodles
- 6
Carrot
- 7
Cucumber
- 8
Peppers and chicken
- 9
Roll rice paper over top of noodles to hold everything
- 10
Fold over sides then complete the roll to create the perfect spring
- 11
For the sauce add all wet Ingredients and mix well
- 12
Serve with spring rolls

I often make fresh spring rolls instead of salad. When I listened to all the requests of my family, this version was the result. The rice paper is simply moistened in water and used to wrap up the fillings, so it's easy. If you aren't going to slice the rolls, tuck the ends in as you roll them and they're less likely to fall apart.There are many ways of rehydrating rice paper, but I just wet it quickly in water. If it's over-soaked it becomes really hard to handle. Any tough bits will quickly soften, so until you get used to wrapping these spring rolls, it may be easier to handle the rice paper while it's still stiff.
