Cooking Instructions

In large bowl, combine all dry ingredients and mix well.

Heat skillet on medium heat (or electric griddle on 300°F)

Add eggs, apple sauce, milk and syrup, stir approx 20 times. Do not over mix. There should be lumps.

Fold in apples and bacon.

Using your 1/2 cup, ladle batter onto skillet making as many pancakes as you can without crowding.

Cook until edges are firm and bubbles are seen throughout. Flip and finish cooking. Repeat process until all batter is used.

Serve with more syrup, or apple butter and cook up the remaining 1/2 pound of bacon for a side.

I came across bacon and egg pancakes in a couple of places. I figured that amazake pancakes would be even more suited savoury toppings and gave it a try. I also tried adding a hamburger patty to this and sandwiched it with another pancake to make an 'Extra Large Bacon and Egg Muffin'. It is, however, a little tricky to eat.If you add cooked vegetables, it will be more nutritionally balanced, plus it makes it more colourful. I recommend cooked vegetables over raw ones because you fit in more cooked vegetables than you could raw, and there's no fear of moisture soaking into the pancakes.Fry your favourite vegetables and season with salt and pepper.
