Ingredients

  1. 8 ozfresh shiitake mushrooms sliced
  2. 1onion sliced thin
  3. 2large carrots sliced thin
  4. 4 clovesgarlic minced
  5. 3 tbsp.minced ginger
  6. 3 cupschopped bok choy
  7. 4 cupschicken stock
  8. 2 tbsp.liquid aminos or soy sauce to taste
  9. 1 tbsp.fish sauce
  10. 1 tbsp.canola oil
  11. 4green onions sliced for garnish

Cooking Instructions

  1. 1

    Heat oil in pot and cook onion until soft. 3 minutes or so.

    Add carrots, ginger and garlic. Cook for 2 minutes.

  3. 3

    Add mushrooms. Continue cooking for 5 minutes on low heat.

  4. 4

    Add chicken stock, bok choy and seasonings.( sauces). Cook until bok choy is tender but not mushy. Around 15 minutes on low simmer.

    Add shredded chicken if desired.

  6. 6

    Garnish with green onion
